In an effort to reduce food related inflammation that caused multiple symptoms, I’ve made a major dietary change in the last few years. Gone is a majority of the processed food I’d defaulted to because it’s easily accessible in American grocery stores. After research, trial and error, and a couple of notebooks worth of recipes, I’m eating my own version of an anti-inflammatory diet. The result is a greater reliance on fresh ingredients, less meat, more seafood, no night shades (tomato, pepper, eggplant, and potato), and zero gluten.

I sometimes feel like I’m starting all over again in the kitchen. However, I no longer feel like a zombie on a daily basis, so it’s worth it.
